Alfajores de Medina – this was my first serious foray into food research, on medieval Spanish cookies which was my entry in the 2016 Ice Dragon. While it did not end in a perfectly period cookie, I found a wonderful 18th century recipe, and tweaked it to make it gluten and nut free. Not bad for a confection made primarily from nuts and breadcrumbs! (the second iteration of Alfajores, made with an actual period recipe was submitted to the Ice Dragon 2017, and won the category, but I actually think this version tastes better!)
